Ingredients

  • 2 Packets Uncle Ben's Ready Rice (Roasted Chicken flavor)

  • 1 Bag Aldi Brand Frozen Peas

  • 1 Bag Aldi Brand Broccoli Florets

  • 4 Large Carrots

  • 6 Roasted White Button Mushrooms

  • 4 Bone-In Chicken Thighs

  • Sugar-Free Teriyaki Sauce

  • Cooking oil spray

1.Prep & Roast the Chicken:400°F oven.
Preheat your oven to 400°F. Spray a baking pan with oil, place the bone-in chicken thighs on the pan, and roast until the internal temperature reaches 155°F. Once cooled, remove the skin and cut the chicken into a large dice.

2.Roast Carrots & Mushrooms:Concurrent prep.
While the chicken cooks, cut the carrots in half, place them on a sprayed pan, and roast with the chicken until crisp/tender. Slice the mushrooms and cook them in a sprayed pan over high heat until lightly browned on both sides. Dice the cooked carrots into small pieces.

3.Prepare the Rice & Greens:Stovetop / Microwave.
Cook the ready rice according to package directions and set aside. Thaw the frozen peas and cook the frozen broccoli according to package instructions. Cut the broccoli florets into a small dice.

4.Assemble & Serve:Layering.
In a large bowl, place the cooked rice as the base. Top with an even layer using all of the thawed peas, followed by the diced carrots, sliced roasted mushrooms, and broccoli florets. Top with the diced chicken. Serve hot with sugar-free teriyaki sauce on the side!
